What chia seeds actually do in bread

Chia seeds are tiny, but they pull real weight in a loaf. They do two jobs at once:

  • They hold moisture. Chia absorbs many times its weight in liquid and turns gel-like, which helps a quick bread stay tender and moist for days instead of drying out by the second morning.
  • They add real nutrition. Chia brings fiber, plant-based omega-3 (ALA), and a little protein, quietly working in the background of something that already tastes like a treat.

None of it changes the flavor. You will not bite into a slice and taste "chia." You will just get a loaf that stays soft and eats like real food.

Is chia good for baking?
